My mother taught me everything I know about cooking. She has fondly reminded me of this point on many occasions over the years. While there is a lot of truth to her statement, I also completed a culinarily arts program at Humber College, served as a head chef at a reputable Italian banquet hall, and ran my own rustic Italian restaurant.
When I was young, my love of food led me to my mother’s kitchen. I enjoyed watching her cook rustic Italian dishes with my aunts and grandmothers, especially homemade pasta. Under the watchful eye of my mother, my first task as a child was to crank the pasta roller. Whether it was lasagna sheets, spaghetti or fettuccine, I loved their step-by-step process of making pasta by hand.
I guess you could call me an old soul because I still prefer the original pasta maker over modern kitchen gadgets. My family’s early Italian traditions have stayed strong with me. I look forward to making pasta sauce, an assortment of sausages and red wine every year. My heart is full every time my family comes together for one of these labours of love.
My heart is also full when I cook for my wife, friends and family. While I have given up cooking professionally, they continually tell me to follow my childhood passion. So, based on their encouragement, I have launched a personal chef business to create intimate and memorable in-home dining experiences for special occasions. If my love for cooking can bring joy to more people, nothing would make me happier!
